Easy Crockpot Chicken Tacos
http://mychocolatetherapy.blogspot.com/2012/01/crockpot-chicken-tacos.html
We've made this recipe twice and it came out fantastic both times. You can serve it over rice, on chips to make nachos, in soft or hard taco shells, or on a bed of lettuce! It's soooo incredibly simple. As many chicken breasts as you'd like (we used 4 frozen ones), a package of taco seasoning (or your own homemade seasoning like we used with cumin, salt, pepper, and chili powder), and one jar of any salsa (we used black bean and corn salsa since it's mild). Our son loves it. Seriously some of the juiciest chicken I've ever had in a taco. We serve it with a side of rice. We made tacos and I put shredded Mexican cheese and a dollop of sour cream in mine. The original blogger used some guacamole which would be yummy too! We had plenty leftover for Tom to take to work the next day, too! Any recipe that gives us leftovers and is fairly cheap makes our family happy ;)
Doesn't this recipe look good? Let me know if you give it a try!
